Phillip commenced his butchery apprenticeship at Rochester Meats in Homebush. After six years, he left Australia to work and travel overseas. Whilst in London, he worked at Randall’s Poultry & Game Dealers in Fullham which won the UK Award for the Best Retail Butcher in the UK. Phillip also worked at Doves in Battersea, a third generation family butcher, where he learnt traditional style butchery performed by hand and no machinery was used.
Phillip returned to Australia and joined the Hudson Meats team in 2007 and in November 2008 when the Cammeray store opened, he became a partner in the business.
