Dan Pepperell

Fault cannot be found in Dan Pepperell’s pedigree. He started his apprenticeship at Tetsuya’s working under Martin Benn (Sepia) and spent the last two years of his apprenticeship working for Mark Best and Pasi Petanen at Marque. Since his apprenticeship, Dan has worked in Melbourne with Dan Shewry at Attica, spent a year and a half working at Momofuku Ssam Bar in New York and returned to Sydney as Head Chef at 10 William St. During his time there the restaurant was awarded a Sydney Morning Herald Chef Hat and Dan was Timeout’s best new talent. Last year Restaurant Hubert was opened with Dan at its helm. They promptly won 2 chef’s hats, Sydney Morning Herald Best New Restaurant, Gourmet Traveller Best New Restaurant and restaurant of the year from Timeout. All justly deserved.
